Red Quinoa Grain Bowl, Chickpea Saffron Tagine, Seared Halloumi

Fluffy, perfectly done quinoa cooked via the absorption method is topped with a deeply savoury chickpea tajine with tomatoes, roasted aubergine, zucchini, peppers and olives, its robust flavours and textures underpinned by a heady mix of spices including saffron and smoked paprika. Topped with seared halloumi for richness, this is a wonderful prep-ahead meal where the components can be made in the weekend and easily pulled together throughout the week. GF, V, VVO


Quinoa Goreng, Tofu Satay with Peanut Sauce, Okra with Sambal Belado, Turmeric Omelette
Once you have a batch of cooked quinoa, it can form the basis of many meals. Here, inspired by the Indonesian flavours of nasi goreng, quinoa is saut
éed with caramelized onions, garlic, curry leaves, and kecap manis. Tofu which has been steeped in an aromatic marinade infused with galangal and lemongrass is grilled and served with a creamy peanut sauce. For freshness, there’s okra finished with a moreish cooked condiment known as sambal belado, whilst beautifully sunny yellow turmeric omelette adds further interest. GF, V, VVO


Burmese-style Homemade Shan Tofu Salad

This appetizing Burmese classic, known as Tohu Thoke, stars homemade Shan tofu, which is crafted using chickpea flour (as opposed to soy beans) and sets into a delicately custardy, quivering texture. The accompanying long bean and cabbage salad is tossed with a fragrant shallot oil and lime juice dressing, and lent crunch with toasted broad beans, sesame seeds, and crispy shallots. GF, V, VV


Roasted Squash and Red Onion Salad, Tahini Sauce, Pinenuts

Sweetly succulent roasted squash and red onion is drizzled with a boldly flavoured tahini dressing spiked with lemon juice, then sprinkled with an intriguing spice mix inspired by the eastern Mediterranean spice blend known as Za’atar.
