In this hands-on class, students will learn to build a deeply aromatic and balanced bowl of traditional braised beef noodles from scratch.

Participants will prepare a rich beef broth, tender braised beef shank, slow-cooked beef tendon, house-pickled mustard greens, and fragrant chilli oil — assembling a complete bowl with professional depth and structure.

- Learn to build a balanced, aromatic beef broth with depth, clarity, and proper seasoning control.
- Understand cut selection, flavour penetration, and braising techniques to achieve tender yet sliceable beef.
- Learn to balance acidity, salt, and crunch of mustard greens to create contrast against a rich broth.
- Master oil temperature control and spice layering to produce aromatic heat without bitterness for the chilli oil
