Inspired by my Peranakan Grandmother, I have created the Umami and Old School Red Bean paste as fillings that can be used to make Mooncakes, CNY goodies or simply an everyday teatime snack.
Umami filling makes for a perfect flavorsome sweet and savory pastry while the Red Bean Paste paired with tangerine peel and finished with walnut for texture brings back a nostalgic taste and feel.
