We’ll master two styles: a briny, elegant Seafood Risotto featuring squid, prawns, and scallops, and a creamy truffle mushroom & chestnut risotto. Perfect for those who want to elevate their comfort food game with a touch of finesse.

1. The Risotto Foundation
• Choosing the right rice
• The essentials of toasting, deglazing, and building flavor slowly
• Getting that perfect “al dente” bite with a creamy finish

2. Seafood Risotto: Squid, Prawns & Scallops
• How to prepare and clean seafood for best flavor and texture
• Building a seafood broth base for added depth
• Timing the seafood add-ins for tenderness, not chewiness
• Finishing with herbs, lemon zest, and a touch of butter

3. Creamy Risotto: Truffle Mushroom & Chestnuts
• Using a mixture of dried and fresh mushroom for the ultimate mushroom
